 Our journey from suit & tie to mud boots.

We, Don & Cathy, moved from the city in 1994 and cleared this land to begin our journey. With the help of friends and family we hand built a straw-bale home from recycled materials and a neighbor’s custom baled wheat straw. Don's time in Tuscany inspired his worldview of enjoying life through food and wine shared with friends in welcoming spaces. Together, with our friends help, we built a place/space that sparked that same Old Worldmagic in which to raise our two children.

By 2001, we planted our first grape vines to reflect the beauty, vitality, and zest of the Old World wine growing regions we love; Italy, France, Spain and Portugal! Our vineyard now has over 3600 on-site plantings. We love unique varietals (Frontenac, Baco Noir). Our wines feature grapes from our vineyard and those from small area vineyards near us. From Beaujolais-style young blushes to red wines aged in oak, NightHawk Winery uses grapes that fully express the terroir of eastern Kansas.
